In a world where convenience often trumps quality, there’s something deeply satisfying about crafting your own culinary staples. Sourdough tortillas exemplify this sentiment perfectly. Not only do they boast a tantalizing flavor and texture, but they also offer so many good health benefits, especially when crafted with unbleached flour. Let’s delve into the art of making these delightful discs of flavor and wellness.

Health Benefits of Sourdough Tortillas:

Sourdough tortillas aren’t just a treat for your taste buds; they’re also a boon for your health. Here are some reasons why you might want to consider incorporating them into your diet

  1. Gut Health: Sourdough fermentation breaks down gluten and phytic acid, making it easier to digest. This process also promotes the growth of beneficial gut bacteria, aiding in digestion and overall gut health.
  2. Nutrient Absorption: Fermentation enhances the bioavailability of nutrients in the flour, ensuring that your body can absorb them more effectively. This means you get more bang for your buck in terms of nutrition.
  3. Blood Sugar Regulation: The fermentation process reduces the glycemic index of the flour, resulting in slower digestion and better blood sugar control. This can be particularly beneficial for individuals with diabetes or those looking to manage their blood sugar levels.
  4. Improved Mineral Absorption: Phytic acid, present in unfermented grains, can hinder the absorption of minerals like iron, zinc, and calcium. Sourdough fermentation helps to neutralize phytic acid, allowing your body to absorb these essential minerals more efficiently.
  5. No Added Chemicals: By making your own sourdough tortillas, you have complete control over the ingredients, ensuring that no artificial additives or preservatives find their way into your food. This makes them a wholesome and nutritious choice for you and your family.

Why Unbleached Flour Reigns Supreme:

When it comes to crafting the perfect sourdough tortillas, the choice of flour is paramount. Opting for unbleached flour offers several advantages over its bleached counterpart

  1. Preservation of Nutrients: Bleaching flour involves chemical treatments that strip away the wheat’s natural nutrients. Unbleached flour, on the other hand, retains these essential vitamins and minerals, ensuring that your tortillas are as nourishing as they are delicious.
  2. No Chemical Residues: Bleaching agents such as benzoyl peroxide or chlorine dioxide leave behind residues that may have adverse effects on health. By choosing unbleached flour, you eliminate the risk of ingesting these harmful chemicals.
  3. Better Flavor and Texture: Unbleached flour maintains the natural flavors and textures of the wheat, resulting in tortillas with a richer taste and more satisfying mouthfeel. Your homemade creations will rival those of your favorite Mexican restaurant!

Prep Time 15 minutes mins
Cook Time 25 minutes mins
Servings 12

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup sourdough starter active, fed
  • 2 tablespoons olive oil
  • Additional flour for dusting
  • 2/4 water

Instructions

  • Mix the Dough: In a large mixing bowl, combine the flour and salt. Add the sourdough starter, water and olive oil, then mix until a shaggy dough forms.
  • Knead the Dough: Transfer the dough to a floured surface and knead for about 5 minutes, until the dough becomes smooth and elastic. If the dough is too sticky, add a little more flour as needed.
  • Rest the Dough: Place the dough back in the mixing bowl, cover with a clean kitchen towel, and let it rest at room temperature for 4-6 hours, or until it has doubled in size. This slow fermentation process will develop the flavor of the tortillas.
  • Divide and Shape: After the dough has doubled in size, divide it into 8 equal portions. Roll each portion into a ball, then flatten it into a disk with your hands.
  • Roll Out the Tortillas: On a floured surface, use a rolling pin to roll out each dough disk into a thin, round tortilla, about 6-8 inches in diameter. If the dough sticks, dust it lightly with flour.
  • Cook the Tortillas: Heat a skillet or griddle over medium-high heat. Once hot, place a tortilla in the pan and cook for about 1-2 minutes on each side, until golden brown spots appear. Repeat with the remaining tortillas, stacking them on a plate as they cook.
  • Serve and Enjoy: Serve the warm sourdough tortillas with your favorite fillings, whether it’s classic tacos, hearty wraps, or creative quesadillas. The possibilities are endless!

Notes

If you want to ferment dough longer you can mix it and let it ferment for 12-24 hours.
